Private hotel group Macdonald Hotels & Resorts has hired two regional development chefs who will develop menus across the entire business.
Stuart Duff and Giles Stonehouse will together be responsible for developing 45 venues across the group, mentoring individual chefs and strategically planning the offering of each.
The pair will split the UK on a regional basis with Stuart Duff taking responsibility for the north and Giles Stonehouse the south. The former will also assume responsibility for food safety management, the Scottish Steak restaurants and Stonehouse will prioritise consumer trends and menu innovation.
Stephanie Hocking, operations director at Macdonald Hotels & Resorts commented: “As highly experienced chefs within the industry, Stuart and Giles were the ideal candidates for these key positions within the group. Together, they will help further drive forward our committed sourcing policy to ensure we continue to serve the finest and freshest produce in our restaurants, conference suites and meeting rooms and will be sound mentors for our chefs of the future.”
