29 March 2010: Gordon Ramsay’s first Australian restaurants, maze and maze Grill, will open tonight in the heart of Australia’s food capital, Melbourne. Both restaurants are located at Crown Metropol, the third and newest hotel within the Crown entertainment complex, which is due to open in April.
Until now reservations could only be made online, but from tomorrow, Tuesday, March 30, reservations can also be made by calling maze Melbourne direct on (03) 9292 8300.
Gordon Ramsay’s right-hand man in Australia is Josh Emett, Chef de Cuisine of both restaurants. Josh will also be responsible for Crown Metropol’s in-room dining as well as the hotel’s spa cuisine.
Josh has worked with Gordon Ramsay for 10 years, quickly rising through the ranks at Restaurant Gordon Ramsay, Gordon Ramsay at Claridge’s, and The Savoy Grill in the UK, before heading to the USA where he was responsible for Gordon’s USA-based operations. These include maze and Gordon Ramsay at The London NYC, and Gordon Ramsay at The London West Hollywood. In that time Josh was awarded four prized Michelin stars.
Running front of house at maze Melbourne will be Enda Cunningham as General Manager, Melburnian Randa Assi as Restaurant Director, and Bendigo boy Lincoln Riley as Head Sommelier. Enda and Randa have both worked with Gordon for the last five years while Lincoln, last year’s winner of the Wine Service award at the Gourmet Traveller wine awards, worked with Gordon Ramsay in London in 2003 at Boxwood Caf
