New dining concepts at Soneva Gili, Maldives

Two innovative new dining experiences have been introduced at Soneva Gili in the Maldives. A stunning floating bar adrift in a beautiful Maldivian lagoon and a contemporary Peruvian/Japanese fusion culinary experience combining breathtaking sea views with intimate dining at Sense by the Sea, the spectacular new restaurant.
The uniquely designed L-shaped bar floating across the resorts lagoon sits 20 guests and features four sunken dining tables with glass bottoms, allowing views of tropical sealife as well as the coral underneath. Guests can arrive by platform boat or by kayaking and swimming to the bar. Featuring its own kitchen, lights snacks are on offer such as seafood salads and lobster casseroles, as well as a selection of refreshing tropical cocktails available throughout the day.
A burst of fresh flavours blending Japanese and Peruvian cuisine has been introduced at Senses on the Sea by Toshiro Konishi, an internationally renowned Japanese born Peruvian chef. The tasting menu includes a quintessential fusion of international food including tasting dishes such as Peruvian ceviche with assorted sashimi, using the resort’s daily catch and fresh organic produce picked from the gardens, accompanied by a selection of Japanese sake. Senses by the Sea has beautiful views of the ocean thanks to its elevated position and features a Sushi Bar and open kitchen station.
Soneva Gili presents 45 beautifully crafted over-water villas off jetties over a tiny coral island in a sparkling lagoon. The over sized stilted villas are crafted in a traditional style from natural materials and feature rooftop and over-water sundecks, open air bathrooms and a private water garden. Other dining experiences at the resort include Dining in the Sand at the Main Restaurant offering relaxed breakfasts and romantic dinners and The Wine Cellar, a stunning underground gourmet cavern in which guests can experience wine tasting dinners from the 300 labels on display. As well as the over-water Six Senses Spa, activities range from snorkelling and diving in the crystal clear waters, yoga, Tai Chi, dolphin cruises and a wide range of non motorised water sports.
