Mandarin Oriental Tokyo has announced the debut of a new sushi restaurant, Sushi SORA. Named after the Japanese word for ‘sky’ (‘Sora’), the new outlet is located on the 38th floor and features large floor-to-ceiling windows that offer panoramic views across the Japanese capital and the soon-to-be-completed Tokyo Sky Tree tower.
In line with the hotel’s oriental interior, the restaurant was designed by Ryu Kosaka, and features granite floors and onyx walls, created around the traditional Japanese Hanchiku techniques, reminiscent of Japanese roof tiles. The restaurant features eight seats at a counter made of Japanese cypress, forming a ‘stage’ for the sushi chef.
“I am immensely proud to have designed a new dining experience for Mandarin Oriental, Tokyo,” Kosaka said.
The Sushi Chef appointed to Sushi SORA is 37 year-old Yuji Imaizumi who has 18 years of experience, and specialises in Tokyo’s authentic “Edo-mae” style of traditional sushi cuisine. The hotel is located in Nihonbashi, an area often regarded as the birthplace of sushi.
