Cathay Pacific Airways has further asserted its position as Hong Kong’s home carrier by introducing a local food staple for passengers to enjoy. The airline’s Signature Noodle Soups, now being served in First and Business Class on medium- and long-haul routes until 31 January 2010, give people a real taste of home and tie in with the carrier’s objective to provide the best Chinese food in the air.
Cathay Pacific is now serving 14 types of Signature Noodle Soups on its flights. These include shrimp wonton noodles, braised pork and preserved vegetable with rice noodles, barbecued duck with lai fun noodles, Sichuanese dan dan noodles, braised duck and salted vegetable with rice noodles, spiced pork noodles, deep-fried shui gow noodles and beef curry with ho fun noodles, to name just a few.
The Cathay Pacific Catering team has worked closely with Cathay Pacific Catering Services (CPCS) and various Hong Kong restaurants and culinary personalities to create a range of noodle soups that are authentic in both taste and appearance.
Most of the ingredients are prepared from scratch at the CPCS flight kitchen, including the wontons, shui gow dumplings, braised beef and tendon, and authentic soup bases. Other ingredients such as the noodles, fish balls and BBQ roast duck are purchased from renowned local suppliers.
Cathay Pacific has worked closely with its cabin crew teams and CPCS to develop preparation processes that ensure the quality of the ingredients is not compromised during the cooking process on the ground or when cabin crew reheat and present the noodles to passengers during the flight. The aim is to recreate the authentic tastes and textures noodle lovers are accustomed to.
Cathay Pacific Catering Manager “Concept and Design Brendan Duffy said: “Noodle soup is very much a part of everyday life in Hong Kong” a dish enjoyed by people of all ages and from all backgrounds. This is food that’s identifiably Hong Kong, which is why we decided to create a range of noodle soups we are sure our passengers will recognise and enjoy.”
