Fairmont Hotels & Resorts has announced that reservations are now open for its latest luxury property, Fairmont Cheshire, The Mere, which is set to welcome guests from 10 July 2026. Situated in the scenic Cheshire countryside, the resort promises a blend of elegance and comfort, offering 116 rooms, including 23 suites, and a range of dining and leisure experiences.
The resort will feature a restaurant by renowned chef Gordon Ramsay, alongside other dining options such as The Orangery and The Club Lounge, which will serve both British and Indian cuisine. Guests can also enjoy wellness treatments at the Fairmont Spa and play golf on the 18-hole championship course.
The transformation of the historic Mere estate into a Fairmont property marks a significant investment by Select Group, which acquired the site for $42.5 million (£35 million) and invested an additional $109.3 million (£90 million) in its redevelopment. This project aims to set a new standard for luxury hospitality in the Northwest of England.
Claudia Kozma Kaplan, Fairmont's Chief Brand Officer, highlighted the resort's unique offerings: “Fairmont Cheshire, The Mere offers a countryside sanctuary designed for pause and restoration within beautifully appointed surrounds.”
The resort also boasts extensive event facilities, including a 1,000 square metre Grand Ballroom capable of hosting up to 1,000 guests, making it ideal for weddings and corporate events. Further details and first-look announcements are expected in the coming weeks as the opening date approaches
