Chef Daniel Sanz Martin, the founder of the Michelin Guide-recommended restaurant JARANA, will present a limited-time menu that celebrates the evolution of Spanish gastronomy. Known for his innovative approach, Martin reinterprets classic Spanish flavours through a contemporary lens. His restaurant has been recognised by the Taiwan Michelin Guide for four consecutive years, from 2022 to 2025, and holds Spain's official "Restaurants from Spain" certification.
The menu features five signature Spanish dishes, each reimagined with modern techniques. Highlights include a Soft-boiled Egg Yolk with Fish Roe, inspired by the classic Spanish tortilla, and Galician-style Octopus, a nod to Spain's tapas culture. Other dishes include Seafood Paella, Pan-fried Oxtail Terrine with Red Wine Foam, and Tarta de Santiago, an almond cake linked to the Camino de Santiago pilgrimage.
