Waldorf Astoria Rabat Salé has officially opened Aldabaran, a signature restaurant led by renowned chef Alain Ducasse. Situated on the 33rd floor of the Mohammed VI Tower, the restaurant offers a unique dining experience with panoramic views of Rabat and Salé. Named after a prominent star, Aldabaran honours Arab astronomers and blends Moroccan architectural heritage with modern culinary excellence. The menu, inspired by the French Riviera, features dishes such as petit farcis, gambero rosso with ricotta tortellini, and lamb with caponata. The restaurant also offers a dedicated breakfast experience, a rarity in Ducasse's portfolio, with items like homemade pastries and signature cookpot of eggs and mushrooms.

Chef Morgan Perrigaud works closely with local producers to source ingredients, including a variety of citrus fruits from L'Agrumiste's orchard near Fès. The wine selection highlights Moroccan vineyards alongside French labels, offering guests a diverse tasting experience.

Designed by Pierre-Yves Rochon, Aldabaran combines contemporary interiors with Moroccan craftsmanship and Art Deco influences. Guy Bertaud, general manager of Waldorf Astoria Rabat Salé, stated that the restaurant will set a new benchmark for Rabat's culinary scene, adding a unique dimension to the hotel and the city as a luxury destination.
