Roku, a new Japanese dining and cocktail destination, has opened at the InterContinental Halong Bay Resort, offering guests a unique culinary experience with breathtaking sunset views.
The restaurant, named after the six classical Japanese cooking techniques, combines tradition and innovation to create a menu that celebrates craftsmanship, seasonality, and balance.
Perched above the bay, Roku's menu is shaped by techniques such as Nukazuke (pickling), Mushimono (steaming), and Yakimono (grilling). Signature dishes include Truffle Tuna Tartare and Foie Gras Chawanmushi, each reflecting a distinct technique. The restaurant's design, crafted by WATG and P49Deesign, blends Japanese elegance with Vietnamese mythology, creating a cinematic setting.
Roku also features the Star Bar, offering Japanese-inspired cocktails and a Sake Library with rare and premium labels. The Sake Library is curated to complement the culinary journey, enhancing the dining experience through thoughtful pairings.
Opening its doors in late December 2025, Roku will serve dinner from Wednesday to Sunday, with the Star Bar open daily. Reservations will soon be available through the official website and social media channels.
