Oceania Cruises’ Red Ginger expands menu with creative Nikkei dishes

Culinary and destination-centric cruise line Oceania Cruises adds 12 new, flavourful, and creative Nikkei dishes to its signature Pan-Asian restaurant Red Ginger.  This menu expansion brings a vibrant fusion of Peruvian flavors and refined Japanese culinary techniques and tastes to sea. The innovative menu items recently debuted aboard Oceania Vista and will be available on the line's newest ship, Oceania Allura which launches next month.  The new Nikkei dishes will be added to the rest of the fleet by early 2026. This year marks a monumental milestone for the city of Murcia, Spain, as it celebrates the 1,200th anniversary of its founding by the Moors. Located in the southeastern corner of Spain, Murcia is a city rich in history, culture and charm. A wide variety of commemorative events are planned every day throughout the year, encouraging visitors to immerse themselves in the city’s rich traditions and vibrant culture. To commemorate its 1200-year anniversary, the city of Murcia has launched the “Murcia 1200” campaign, which is transforming the city into a “living museum” with a series of exhibitions, performances and events that will take place every day throughout the year. Each month will be dedicated to a specific century (from 9th to 20th century) and each quarter will be highlighting key themes in Murcia’s history, including the origins of the city (Q1), the root of the three cultures (Q2), the splendour of Murcia (Q3) and the identity of modern Murcia (Q4). Some of the key events and festivals taking place in the city as part of the “Murcia 1200” campaign are: Free ‘Murcia 1200’ guided tours: These free tours, which will take place every Friday afternoon from March to June, aim to showcase the city’s rich heritage, gastronomy and history. Devasom Hua Hin offers guests the regal flavours of khao chae

Devasom Hua Hin invites guests to savour the  traditional Thai dish khao chae at Deva Bistro. While khao chae is essentially a summer dish, this fine example of royal Thai cuisine may now be enjoyed all year round thanks to the resort's talented culinary team.  It is another way by which Devasom Hua Hin offers its guests the elegant nuances of Thailand’s rich cultural heritage. What is khao chae? Literally translated as “rice soaked in water,” khao chae has been served since the reign of King Rama II. Known for its complexity, it consists of four key elements: par-boiled  rice, jasmine-scented water, ice, and an array of side dishes. At Devasom Hua Hin, chefs elevate this dish using flower-scented water made from  homegrown bread flowers (dok chommanat) that are repeatedly infused with aromatic  candle smoke.  The rice is meticulously half-cooked, scrubbed to remove most of its starch, then steamed again to achieve a refreshingly unique texture.  The cooked rice is accompanied by a selection of flavourful side dishes, including bell peppers stuffed with minced pork and wrapped in egg, deep-fried shrimp paste balls, radishes stir-fried in coconut milk, shredded dried pork floss, and sweet Yee-Son fish.  The dish is presented at the table alongside the intricately carved fruits and vegetables renowned in Thai cuisine. In order to appreciate the fine flavours of the dish, a diner should begin by pouring the fragrant water and ice over the rice; each spoonful is then dipped into the water to absorb the floral aroma.  One then tastes the side dishes one by one, keeping them separate from the rice to savour their distinct flavours.  This regal dining experience is offered daily at Deva Bistro at Devasom Hua Hin for lunch or dinner.

Hotel Indigo Bangkok Wellness Road announced the appointment of Nicolas Raynal as its new executive chef. In this role, Raynal will take charge of all culinary activities at the property. Emirates continues to expand its portfolio of vegan cuisine by workshopping new dishes made with innovative ingredients, such as a lookalike solid egg substitute made entirely from legumes, which packs a tasty and nutritional punch for Emirates customers, as well as adding curated vegan meals for children, and new dishes onboard and in lounges. Emirates’ continuous commitment to innovative vegan meals Marking Veganuary, an initiative that has highlighted the benefits of a vegan diet for the last decade, a collective of Emirates’ talented chefs gather in Emirates Flight Catering Concept Development Kitchen to workshop new dishes, and experiment with the latest innovative ingredients on the market. At the workshop, chefs trialled the new solid egg substitute in a spicy shakshuka sauce and developed a premade vegan pastry sheet into savoury vegan cannelloni, as well as evaluating some of the celebrated ingredients and high-quality products already onboard.
