Davide Giacomelli leads culinary innovation at Phulay Bay

Davide Giacomelli, an acclaimed Italian chef, has joined Phulay Bay, a Ritz-Carlton Reserve in Krabi, Thailand, as Executive Chef. He aims to transform the resort’s dining experience by highlighting Southern Thailand’s authentic local and seasonal ingredients.

Giacomelli began his culinary journey at his father’s restaurant on Lake Garda, Italy. He later worked in prestigious kitchens worldwide, including Restaurant Le Meurice Alain Ducasse in Paris and Le Vistamar in Monte Carlo. Most recently, his restaurant LUCE by Davide Giacomelli at InterContinental Singapore earned the “Global Winner” title at the 2023 World Luxury Restaurant Awards.

At Phulay Bay, Giacomelli will oversee six restaurants and bars. He will focus on local seafood, fresh produce and sustainable ingredients. By combining global culinary techniques with Krabi’s culinary heritage, he aims to create dishes that reflect the region. “I want to explore the connection between the land and the sea, local ingredients, and Southern Thai traditions,” Giacomelli said.

As part of his new role, Giacomelli will collaborate with Arnaud Dunand Sauthier, Chef-Patron of Maison Dunand in Bangkok, for an exclusive dining event on 20 November 2026. The event will feature a six-course menu priced at US$155 (THB 5,600++) per person, taking diners on a culinary journey from the Alps to the Andaman Sea.

Giacomelli’s appointment marks a new chapter for Phulay Bay, with a focus on refined dining rooted in Krabi’s local culture and culinary traditions.
