The St. Regis Mumbai is set to host an exclusive culinary residency featuring Manila's renowned Toyo Eatery, a One MICHELIN Star restaurant, on 25 and 26 June 2026. This two-night event at By The Mekong offers diners a unique opportunity to experience the celebrated flavours of the Philippines without leaving Mumbai.
Founded by Chef Jordy Navarra in 2016, Toyo Eatery is acclaimed for its contemporary interpretation of Filipino cuisine, drawing on regional traditions and time-honoured techniques. The restaurant has been recognised as The Best Restaurant in the Philippines 2025 and ranked No. 71 on Asia's 50 Best Restaurants 2026 list.
During the residency, Chef Navarra and Head Chef Patch Marce will present a specially curated seven-course menu. This menu will highlight Toyo Eatery's signature storytelling approach, blending Filipino culinary heritage with subtle inspirations from Mumbai and India. "We aim to offer a deeper understanding of Filipino culture through food," Navarra stated.
Presented in collaboration with Elemental, this event promises an immersive dining experience, celebrating the richness of contemporary Filipino cuisine. The residency is priced at $96 (INR 8,000++) per person and will commence at 7:30 PM each evening.
This collaboration underscores the growing trend of international culinary exchanges, bringing diverse gastronomic experiences to local audiences. As Mumbai's gourmands prepare for this event, the residency is poised to be a highlight in the city's culinary calendar
